Home Canning is a return

Having been raised in rural Alabama, I must admit I am a bit 'tame. Growing up my grandmother's farm, I spent many summer peas and canning in her kitchen. As I got older, we have moved gradually from my grandmother and my canning days ended.

About 20 years ago, I had the wild idea to try again for home canning, after finding a pressure Canner in a catalog. I bought two and I have never stayed canning. Every Christmas my husband andI may be about 75 gallons of pasta sauce and give them a gift. All my friends and family look to the future. I love the recipes may have collected and preserved for years.

home canning is a great way to Summer's Bounty, shops and fruit and vegetables at local farmers markets to save money. With the help of local farmers markets also help the environment because the food is locally produced, and therefore no shipping involved.

For those of you who are new to the canning industry,or those who need a refresher course, the ball Blue Book of Home Canning, or visit their website and download the USDA Complete Guide to Home Canning. Both are great resources.

A lot of people, home canning can be intimidating, but if you plan your moves well, and collect all the equipment before it can be quite a job for the whole family. You also need some good recipes to follow. Always check your recipes and read the manufacturers instructions on theprocessing industries. This will help prevent errors.

Why your Canning Mortgages

Ignore the value of your time, canning homegrown or locally produced foods, you can save half the cost of food purchased in cans. Canning favorite products and special to entertain your friends and family can be very rewarding. home canning has changed greatly in 170 years odd since it was introduced.

New developments in technology have led to safer, higher quality products.home canning is a great way to enjoy a great harvest, and preserve all those fruits and vegetables.

What do I need

I want to invest in a pressure Canner of good quality. You must have low-acid foods, like vegetables and meat. It can also be used as a bath Canner. I advise you to buy a tap Canner quarter 16-17 with a good size, c.

Use only standardType of Mason, Ball or Kerr jars of home-and two-piece self-sealing lids. mayonnaise jars are not recommended for canning. The vessel is obtained from the Classico spaghetti sauce is good as Mason jars. jars are available in various sizes to 1 / 2 liter, pints and quarters. Pint and quart jars are the most used, but some foods such as crab meat and canned mushrooms in only 1 / 2 pint jars. wide-mouth jars are best filled and emptied, butcost more than standard pots.

You also need a good timer, open mouth funnel, a pot with a jar lifter, and tongs to fill. And, of course, pot holders and towels on the racks for cooking or hot pot set after canning. Other items you need are a ladle with a lip, a filter, a colander, food mill and sharp knives. Some of these items, if you just need to make jams and jellies.

home canning is one of the most fun experiences you will ever have. Get thethe whole family involved. It will take many great, lasting memories that your family will always have. You can find pleasure in the canning process, and proud of your home jars of canned food. Remember, they also make great gifts!

Pressure cooker cooking times - really Will Save Me Time?

OK, so you are trying to get one of these vessels and you're wondering if your pressure cooker cooking times actually save a considerable amount of time. This is something that many people ask about. It saves more time to go home and work quickly to decide whether you will save more time if you have a slow cooker and start cooking in the morning already.

Well, the answer is not always so simple forward and tight as you might think. Why? The thing isThere are more than just the cooking time involved.

How well organized you are and how long you in the morning also plays a role. Success using a slow cooker, you must be terribly organized. You have to get a bit 'before the morning to prepare everything and go slow cooker.

If you're like me, this is a big problem. I hate getting up early in the morning and simply does not work for me in everythingMorning. To be honest, I have just time for a cup of coffee in the morning, not to dine alone on the road!

Cooking times faster in one of these jars, you save all this hassle. It is not terribly organized as you can come home at night and the food on the table in no time with one of these vessels. If you do not have thawed meat is done, you can quickly defrost the meal and should be read in a record time.

Here are some examples of the cooking time toyou and the idea:

Pinto beans, soaked, with natural release-1 to 3 minutes
Beef stew, LB 1-1/2 to 2 pounds. - 35 to 40 minutes
Chicken breast, frozen, boneless, skinless - 7 / 10 minutes
Chicken, whole 3 to £ 4 to 18 to 25 minutes
So, I think this makes it very clear, the pressure cooker cooking times are substantially faster and will make your life all that much easier.

Cooking under pressure Canning, What's the difference?

You ask yourself is really worth the time and effort to acquire and maintain my garden bounty this year? For this we are in the local supermarket and see a lot of fruits and vegetables for sale. Buying a home number and enjoy the less than satisfactory. What if you could enjoy these fruits and vegetables throughout the year? Would not it be nice?

Do not forget to visit the grandmother's house and look in her pantry and see rows of Mason jars filled with tomatoessauce, green beans, peppers and more.

Back in the day, my grandmother was in the kitchen in summer, peeling, pale and canning road. Taking the garden to keep collecting glass Mason jars in a large pot of boiling water. Now known as A-day water-bath canning method.

Water bath Canner

The water bath canning method uses boiling water to kill bacteria and serializes the jars and lids. This method is good for high acid foods, such astomatoes and vegetables. The canned food reaches 212 degrees Fahrenheit, when the sea is. The higher in altitude you live the lower the boiling point of water is due to lower air pressure, remember your school chemistry and physics courses high? This is why the water bath canning recipes have different times, based on height.

The problem with using the bath water of low acid canned food method, the deadly bacteria to grow in an oxygen-freeenvironment. Later, when you open the jar and the bite can be very dangerous if not fatal. How can I safely keep the low-acid foods?

Cooker Canner

canning industry uses a pressure cooker pressure cooker designed specifically by increasing the air pressure in the vessel, which in turn increases the temperature at which water boils. Water is an incredible agent to absorb and transfer heat.

Meal ideas for easy side dish

Image : http://www.flickr.com

Sometimes the main dish for the meal is the easy part, but what can you do with the difficult question. Serve the vegetables I usually like my outline and I'm always trying to find new ideas. Here are some of our favorites.

Potatoes. Try the twice baked potatoes with milk, cheese and salsa. For children with small potatoes makes this fun.
Another dish is a saute potato hash brown potatoes, cut your own or with frozen French fries, with onion and season with seasoning salt.

Green peppers. Peppers stuffed with rice or green peppers or use of red, yellow, orange or green for fun.

Zucchini. Cut the zucchini into strips and place on a sheet of aluminum foil. Sprinkle with butter. Then salt and pepper. You can also add other chopped vegetables. Wrap up and bake for 30 minutes or until vegetables are tender. Stuffed Zucchini is a good option.

Carrots. Serve sliced carrots with a dip in a fragmentedsalad of carrots or carrots with a bit of 'icing sugar and butter.

Cauliflower. Steam and serve with a cheese sauce or fry seasoned with garlic butter and sprinkle with breadcrumbs.

Broccoli. Mix broccoli with a tablespoon of olive oil and season with salt and pepper. Bake at 500 degrees 10-12 minutes, stirring once. Create a broccoli salad with sunflower seeds and bacon and serve raw with a dip.

Compliance with a side of corn, green beans or salad is always too big. These are easy meal ideas for side dishes that will hopefully combat the boredom meal.

Here is like a pressure cooker works its magic. L 'cover or lid locks in place creating a closed system in a standard 15 pounds of pressure. At this pressure water boils at 257 degrees F instead of the usual 212 degrees F. The higher temperature cooks the food faster. About three times faster than traditional methods of equipped kitchen. Small and medium enterprises to cook the potatoes in five minutes, and a whole "roast" chicken meal cooks in just twenty minutes. All foods, especially vegetables, keeping their color and flavor. Presto pressure cookers have been around for a long time and offer a variety of different size stainless steel and aluminum pots. Professional chefs prefer stainless steel pressure cooker, because it is responsive and can be safely cleaned in the dishwasher, but aluminum is a good choice if weight is a consideration. Would you like heat resistant double handles, one on each side of the plate, though. A pressure cooker is 6 / 4minimum size of the family. Go bigger if you use it as a Canner.

Food preservation

Growing up, I spent many days with my grandmother in her home. Maintained its emissions, and to work with her I learned a lot 'of plants, gardening, and methods of food preservation. One could say that I have learned to feed in the true sense of the word process.

The processing of food in the days before history began. People had to store food to survive, so they or their dried meat and vegetables, roots frozen stored in a cool, dry areas. Numberfoods are salted for the amount of time that would continue to increase. Processing and preserving food is a matter of survival.

These days, people still have their food in their homes, but the methods are improved. Growing up, I learned everything about the process of growing, preparing and maintaining various types of food. Canning of fruits and vegetables for blanching to freeze meat or poultry in a pressure Canner, I have learned many ways to makethe food last longer.

This is an interesting topic, because even if we think of unhealthy junk food when we hear the word "treated" there are methods of food processing that are not healthy. We used sugar and salt during processing, but the food is still healthy.

Since it is possible to process and store food without being unhealthy, we should all ask why so many additives in foods we buy at the supermarket. They can help keep the food longer, but it would be worth adding a couple of years to our lives in exchange for eating food that has not been that long?

I think the companies are concerned about their food as good as possible in order to add things like salt. Now that the excess sodium is so much of our daily food, we expect them.

Foods that have added salt can not be easily distinguished, and did not taste good to us. The same applies toadded fats and sugars in our food.

Yet there is hope out there in the supermarket. The recent attention to the health of many common foods has led food manufacturers to process more natural and healthy, which is very commendable on their part.

How to make the perfect omelet

Omelettes are one of the fastest and most nutritious meals you can make and are great when time is limited. They can be plain or stuffed with just about everything else, but many people just seem to get the simple process of cooking it all wrong.

The perfect omelet, first you get a good omelet pan of quality required, preferably with a thick base and a metal handle - non-stick commercial species are ideal.

The decision to omelet

For aperson, take two (three if the eggs are small), the eggs and beat in a sturdy plastic or stainless steel mixing bowl with a little 'salt and freshly ground black pepper (optional) herbs.

For a fluffier omelet soft add about the equivalent of half the volume of the eggs with the milk into the bowl and stir.

Put a little 'sunflower or vegetable oil in omelet pan (about 1 cm in diameter) and put the pot on the fire with the maxi-electric or gas.The secret is to make sure the oil is hot and just beginning to smoke, but do not burn, before pouring the egg mixture.

After pouring the mixture, stirring the egg with a fork in a figure eight motion, while still in high heat. Do this for 10-15 seconds or until most of egg mixture is cooked at 75%.

At this stage, there is still a little runny egg mixture into the pan, tilting pan so back and forth until all the holescompletely covered. Turn the heat down very low and continue cooking for another 15-20 seconds.

At this stage we want to make sure the frittata is not attached to the bottom of the pan, but can move almost Friday and can not find a number of non-stick pans that you need to release the frittata from the pan bottom, to name but a spatula or spatula gently around the perimeter of easy to get rid of the pan bottom and sides.

A good tip is to tilt onlythe pan away from you, while touching the handle head with a closed fist. This movement makes the cake and pour it over the edge of the pan. Now you can fold the omelet in thirds. Use the spatula to fold the omelet over a third of the way into the pot, and the rest returned to the fold.

As a filling for omelets, such as cheese, chicken or pre-cooked bacon and mushrooms, for example, do this just to fill the stadium folding.During cold cheese will melt when the omelet is folded.

Hold a plate over the pan omelet, you can now lift the omelet on a plate to serve. This type of closed when folded omelet will continue to cook for about 10-15 seconds longer makes the ideal consistency for serving.

The whole process takes no longer than 45 seconds to 1 minute.

Some people prefer an omelet baked with the filling evenly distributed and flat as a pizza to serve.Others prefer the pancake with the filling inside and only folded in half. In both cases, it is more a place than it seems' as you like. "

Now go and impress your friends, too, with these tips on how to make the perfect omelet. Have fun!

Conserve della Nonna sausage

During canning season, I often remember my grandmother to take you and sausage patties. She had just had hamburgers and neatly stack them in a wide-mouth jar and then fill the container filled with hot sausage grease. He then securely lids, flip them to seal and it was done. As I remember looking at the food cupboard and see dozens and dozens of vases carefully stacked head. It seems that in those days it was customaryPlace the jar upside down to ensure a good seal.

Over the years I grew up and studied the art of canning on my own I discovered that there are two main ways to sausage. You can change the shape and fry the meatballs until firm similar to the way my grandmother did, or you can fry the sausage and crumble it and then fill jars.

The second way you should cook some of the sausage until it began to split into small pieces and then these pieces for use ingravy or stews. Here are some tips to follow when you try on your own.

It is advisable to omit any use of sage in your recipe if you decide to mix their own sausage. If you are canning the worst way will tend to taste bitter. Mostly I use very few spices and herbs in my mix and that the use of my favorites, such as garlic or onions if they are actually stronger tasting in your product box. Instead, you could use a little 'red-hotpepper, salt, black pepper, thyme, or maybe a bit 'of oregano to flavor the sausage that will be possible.

When you select the meat to make two thirds of lean meat of choice for about 1 / 3 of fat in the best sausage in a box that can be done. It could be your sausage the same way you would meat, except that you make small patties and fry very well in the ground.

Unlike meat, you can use the fat from cooking the sausage in the real Becertainly not to fill the jar too full to 2 / 3 is enough. Pour the fat and make sure the sausage is concerned. Maybe you want a bit 'of extra fat to be used to cover the sausages in the melting pot. Hold the lard or fat is very hot, waiting to be poured into the pot.

Finally, you want the lids on the jars and then placed in a pressure Canner pressure to 10 pounds. Pinta to the pan and cook for 75 minutes for quarts90 minutes.
